Ginger Fennel Spring Tea

GINGER FENNEL TEA
2 tbsp fennel seeds
1 tbsp ginger root, finely chopped
5 cups water
Optional: squeeze of lemon juice or raw honey
In a small pot, bring water to a boil.
Add the fennel and ginger.
Simmer on medium heat for 5 minutes.
Turn off heat, cover and allow to steep for another 5 minutes.
Remove from heat, strain the liquid and discard the pulp.
Stir in fresh lemon juice at the end.
Sip hot, or store in a thermos and enjoy between meals. If sweetening with raw honey, wait until the tea has cooled a bit to stir in and is not piping hot.
